Top Chefs Reveal Their Kitchen Secrets

Stephanie Izard missed her first flight that day, so I talked to her on the phone just as she was arriving in the San Francisco airport. She is currently working on opening up her new restaurant, The Drunken Goat, which is scheduled to open in January.

That night, she had planned on a roasted rack of lamb with strawberries, Vidalia onions, and fingerling potatoes. Manuel roasted the Vidalia onions, which he then stored in the walk-in refrigerator. Just as Mark, Manuel, and Ryan were leaving to reach the home where they would be giving the dinner, they realized they were still in there — to me, that was a real Top Chef moment.
