NYT: Never serve anything that looks creepy or runny or wrong.

Ask yourself, is this dish appetizing? If the answer is no, then maybe you should check with your chef. It’s possible that the dish is missing one last ingredient, sat too long under heat lamps, or maybe is the last order for a dish and looks it. Don’t force a guest into sending something back, do it before it gets to their diner plate. You’ll look like a better server and your restaurant’s food will look better for it.
