NYT: If a table is not ready within a reasonable length of time, offer a free drink and/or amuse-bouche. The guests may be tired and hungry and thirsty, and they did everything right.

If guests made a reservation, arrived on time, and end up waiting, they will likely be hungry and very grumpy. Nip that grumpiness in the but and give ‘em a cocktail or a little snack to let them know you’re sorry and that you understand why they are a little annoyed.
