Hey Courtney,
Things have changed quite a bit in the past 5 or 6 years. the bar has been raised a bit and the programs and apprentiships are much more involved. when I got certified I went straight for the Executive Chef Certification because I had been in the business for 16 or so years already and had been teaching for three years. so i felt pretty confident about passing. I was also very instrumental in opening our local chapter. I highly reccomend being involved and getting certified each step of the way. rj.

Thanks! I'm going to be starting Culinary School in July, and I see that you are a certified Executive Chef. How did you get started? At our orientation the chef's were saying that you start out a cook and you work your way up. Is that by promotion, or just by experience?
