    Chef Juan, I recently came across a fantastic book. It's titled "Creating Chefs-a journey through culinary school with recipes and lessons". I've tried some recipes, had to put my own spin on them though. The book was written by Carol w. Maybach with Glenn Humphrey. My favorite thus far would have to be Tenderloin Medallions Robed in a Citrus Chipotle sauce.
