I was speaking of Jean Georges sourcing local liquors and other local ingredients. The wine we get from Mount Baker Vineyards is packaged in a metal pony keg for us. I just meant that was a way we sourced locally. And using reusable kegs keeps costs down for the winery-no bottles for us.

Hey Carrie I really enjoyed the article about Jean Georges. At our restaurant we even have a local winery package red and white wine in a keg for our kitchen. We just pump it out for cooking. Mount Baker Vineyards puts up a red blend and a white blend for us that are nicer than anything I have ever used in a pro kitchen before.
